Is it herbs or erbs?

I recently heard a talk by a Master Gardener on the subject of erbs, or is it herbs? Phil Roudebush from Shawnee County spoke knowledgeably and kept us entertained while giving us a good overview of the subject. He defined herbs as “…any plant with leaves, seeds or flowers used for flavoring, food,drink, medicine or perfume.” or “…a part of such a plant as used in cooking”.

As for pronunciation, Roudebush said either with or without the h is acceptable.
